Welcome to a new season of the Alila Manggis
Cooking School. The 2004 Cuisine & Culture Experience promise
an exciting and insightful look into the Balinese culture. Guest
have the opportunity to experience the true essence of the Balinese
lifestyle up close and personal through excursions into the
heartland of Bali, learing about how to make traditional handicrafts
and wearing typical Balinese attire and, of course, by hands
on cooking classes conducted by Alila Manggis's team of chefs. |
Half
Day Program
We start the day with an early morning breakfast in the lobby
at 7 am. Lead by Alila Manggis chefs, visit the morning market
at Klungkung and experience the amazing sights, sounds and aromas
of one the busiest village markets in East Bali. You will have
the oppotunity to interact with Balinese sellers and purchase
some of the ingredients to be used in the cooking lesson later.
We return to the hotel to prepare some of Bali's most well known
local dishes that will inspire and tantalize the taste buds.
Learn how to use the ubiquitous Ulekan (traditional Balinese
mortal and pestle) to make the embodiment of the Balinese cuisine,
the chili sambal (spicy chili paste), bumbu Bali (Balinese curry
paste), and bumbu sate (peanut sauce). The chefs will guide
you on how to use the work to prepare nasi goreng (fried rice)
Balinese style, roles papes ikan (grilled fish in banana leaf)
and ayam satay (grilled chickec skewers). Then savour the morning's
handiwork over a leisurely lunch in The Restaurant. The evening
is at your leisure. |

Two
Days Program
Day One
We start the day with an early morning breakfast in the lobby
at 7 am. Lead by Alila Manggis chefs, visit the morning market
at Klungkung and experience the amazing sights, sounds and aromas
of one the busiest village markets in East Bali. You will have
the oppotunity to interact with Balinese sellers and purchase

We return to the hotel to prepare some of Bali's most well known
local dishes that will inspire and tantalize the taste buds.
Become skilled at using the ubiquitous Ulekan (traditional Balinese
mortar and pastle) to make the embodiment of the Balinese cuisine,
the chili sambal (spicy chilli pate). The chefs will then guide
to you on how to use the work to prepare nasi goreng (fried
rice). To round off the lesson, learn how to make simple but
flavorful Balinese desserts that will complement a typical local
meal. Then, savour the morning's handiwork over a leisurel lunch
in The Restaurant. In the afternoon we take you to Tengan a
pre-Hindu Bali Village to visit the original basket weaving
and double ikat fabric designers. Famous for their baskets and
intricate woven products, you will meet the Chief of the Village
who will (through your personal guide and translator) describe
the culture and religion of this unique village, kept relatively
unspoilt in ancient traditions behind closed walls. The evening
is at your leisure.
Day
Two
Breakfast is at leisure. At 9 am, we take you up into the hills
of Putung to experience the natural beauty of east Bali. Alila
Manggis Bale (Balinese-style pavilion) and organic garden perched
high on Putung is your destination for the morning lesson. Our
chefs will show you the preparation of satay (marinated meat
skewers) as well learn how to prepare a BBQ, Balinese style.
Using coconut husk (which gives the dishes a unique flavor),
the chefs will barbaque meat and seafood for your lunch.
After lunch, take a stroll in the verdant the rice fields and
salak (snackfruit) plantations before returing to the hotel.
Learn the correct way to tie a sarong, the different types of
ceremonial dress and the right way to wear them. Enjoy the rest
of the day by the pool or indulge in rejuvenating treatment
at Mandara Spa. For dinner, we invite you to Alila Manggis "sarong
evening". Wearing your traditional Balinese dress, enjoy
a sumptuous feast consisting of many local dishes as well as
the walk known 'babi guling' (spit roasted suckling pig) prepared
in the special Alila way. With gentle sea breezes blowing throught
the coconut trees and the languid waves lapping at the shore
we conclude Alila Manggis Culture and Cuisine Experience serving
your dinner in true east Balinese style and hospitallity. |
